Intellij SFCC puts the everyday controls on the main toolbar, its tool windows on the right and bottom of the IDE, and its file actions in the Project view and editor menus. This page lists all of them in one place
Main toolbar
In the New UI the plugin's buttons sit on the right of the main toolbar. In the classic UI they follow an "SFCC:" label on the main toolbar and the navigation bar

Tools › Salesforce B2C Commerce has four entries: Auto Upload, Deploy Code, Clean active code version and More Intellij SFCC actions. Clean active code version and More Intellij SFCC actions work from there. For Auto Upload and Deploy Code, use the toolbar buttons, the menu entries don't start them

With the macOS System Shortcuts keymap, Find New Cartridges is Ctrl+Option+]. The deploy shortcut uses the Meta key, which many Windows and Linux keyboards don't have, so give it a shortcut of your own there
To change a shortcut, open Settings › Keymap and search for the action name. The deploy shortcut is listed as Single Instance Deployment
